COOKING CLASSES

The cuisine of the Finnish archipelago has been delighting foodies and lodge guests for many years. We offer archipelago cooking courses, event-based dinners and seasonal workshops on topics such as foraging and wild herb gathering in our archipelago kitchen on the grounds of the Kalliokumpu Eco Lodge. The courses are held in small groups. Under the guidance of Sami Bill, we cook with excellent local ingredients. The courses are designed to be fun and give an insight into the aromatic diversity of the island world. In each course, participants receive valuable information on the respective topic and the culture of the Finnish archipelago and, of course, get to enjoy the taste of the dishes they have prepared.

So that you can recreate the dishes at home, you will receive a beautifully designed recipe card from us at the end of the cooking event.

The courses are suitable for all cooking skills and are an excellent opportunity to immerse yourself in the flavours of the Finnish archipelago and inspire your own creativity.

All group courses start at 12:00 (unless otherwise agreed)

Cost: From € 80 per person – based on a minimum of 2 participants (prices for private courses and themed dinners (6–10 people) on request).

In addition to culinary highlights from the Finnish archipelago, we also offer a selection of cooking workshops on German-Bavarian cuisine.

Our courses are popular gifts and we also offer gift vouchers. The courses can be booked privately, for lodge guests and also for individuals or couples.

LEARN FINNISH A BIT

Did you know? Finland is the country with the highest coffee consumption in Europe. Finns love coffee. And they love it with delicious yeast pastries such as korvapuusti or rinkelimunkki. While mixing the dough and letting it rise, we'll teach you a few words of Finnish in a fun language course. Baking Finnish style! Then you'll soon be able to bake authentic Finnish cinnamon rolls and doughnuts at home (this cooking class is also great for families).

Campfire & outdoor cooking:
FLAMED SALMON & SMOKING

Meals around the campfire have always been part of archipelago cuisine. In midsummer, the archipelago region celebrates not only the cooking experience but also spending time together in nature. In this cooking course, we use flame, embers and smoke to delight our palates. Eating around a campfire should be fun. We will start by lighting the fire. Later, we will prepare delicious flambéed salmon, smoke food in a smoker and create a delicious outdoor meal.

Sauna cuisine + dinner:
SAUNA DINNER & COOKING IN THE SAUNA

In Finland, people don't just go to the sauna to sweat. They also cook there! Stew dishes prepared on the hot stones of the sauna stove are typical for cooking in the sauna. But believe us – there's more! While you're cooking in the sauna, we'll prepare a very special 3 + 1 course menu and show you how and what you can cook in a Finnish sauna (e.g. bread baked in a sauna ladle/ sous vide cooked reindeer fillet with root vegetables/ flambéed cheese with cloudberries/ + ?). Between sauna sessions, you will dine at a set table on the sauna terrace (you will of course wear swimwear and a bathrobe in the sauna and during dinner). A private, unique and culinary sauna dinner that you will not forget in a hurry!

In this cooking class, we will create two classics of Finnish archipelago cuisine that go together like summer, sunshine and days at the seaside. We will use fresh or smoked salmon or trout from the region and summer vegetables from nearby farms. This will be accompanied by homemade archipelago bread. This cooking class brings together classic island flavours and local tradition!

Wild power food:
DELICIOUS BERRIES FROM THE ISLAND FOREST

Get out into nature! We'll gather ingredients for berry dreams. Perfect crumble, lingonberry spread, whipped porridge or a DIY gift, such as real Finnish wild berry jam! Depending on the season and the berries available, we'll create sweet and savoury delicacies from the power food of the Finnish forests. We'll go for a walk in nature together and you'll learn about the special features of wild berries as well as a whole lot about the plants and animals we encounter along the way. Later, we'll cook together in our Archipelago Kitchen. (Berry season: mid-July to mid-August/ Outside of season, we use our frozen berry supplies – this cooking class is also great for families).

Simplicity is often the best recipe. And Finnish cuisine in particular loves basic flavours. Whether fish or seafood, the ingredients are combined to bring out their unique characteristics. Without any frills, we conjure up the most popular island snacks from the archipelago region. What would you like? Pickled herring, sprats, toast Skagen or something more unusual with seaweed pesto and Baltic Sea salad?

Wildfood:
FORAGING VARTSALA

A wild foraging adventure where you can pick, taste, smell and eat everything that the island's nature has to offer! In search of unique culinary experiences, we head into the woods or to the sea. We prepare a fresh forest tea and later, in the Archipelago Kitchen, we combine the ingredients we have found to create a small tasting.

BREZN, KNÖDL & SAUERKRAUT

Anyone who has ever been to Bavaria will have encountered at least one of these famous delicacies. They are everywhere at Oktoberfest. We will show you the basics of hearty cuisine and give you an introduction to Bavarian cooking. At the end, there will be a lavishly laid table and a genuine Bavarian 3-course meal with a Bavarian starter, main course and dessert!

Christmas baking:
CINNAMON STARS & ALMOND STUFFED CAKE

Christmas in Germany – that definitely means cinnamon stars and Christmas stollen. The most famous stollen is undoubtedly the Dresden stollen. Sultanas, candied orange peel, almonds, marzipan and lots and lots of icing sugar are essential ingredients. And for the cinnamon stars, you'll need cinnamon, of course. We'll bake these two sweet classics with you in a festive atmosphere. At the end, you'll take home a bag of delicious cinnamon stars and your own stollen.
