In our island kitchen, we don’t just eat—we cook together (e.g., upon request in Kalliokumpu Journey DEEPEN).
During the day, in tune with the island’s rhythm.
We create classic dishes from the Finnish archipelago and offer a simple, direct introduction to the culture and traditions of the archipelago. You’ll learn basic techniques, ingredients, and combinations—not just as a recipe, but as a feel for this cuisine. There’s chopping, stirring, and tasting. No pressure, no need for perfection.
The focus is on spending time together:
Cooking, conversation, laughter.
At the end, we sit down together at the table and taste what we’ve created.
A piece of the archipelago to take home.

A classic dish from the archipelago:
SALMON SOUP

A classic dish of Finnish archipelago cuisine that always brings to mind summer, sunshine, and days by the sea. It features fresh or smoked salmon or local salmon trout, along with summer vegetables from nearby farms. This dish combines classic island flavors with timeless tradition!

LEARN FINNISH A BIT

Did you know? Finland is the country with the highest coffee consumption in Europe. Finns love their coffee. And they love to enjoy it with a delicious pastry, like “korvapuusti.” While we mix the dough and let it rise, we'll learn a few words of Finnish together. So, let's bake in Finnish! Then you'll soon be able to bake authentic Finnish cinnamon buns at home.

Wild power food:
DELICIOUS BERRIES FROM THE ISLAND FOREST

Let’s get out into nature! We’ll gather ingredients for berry-inspired treats. Perfect crumble, lingonberry spread, or whipped porridge. Depending on the season and what berries are available, we’ll create sweet or savory delicacies from the superfoods of the archipelago forests. To do this, we’ll take a nature walk together, and you’ll learn not only about the unique qualities of wild berries but also a whole lot about the plants and animals we encounter along the way. (Berry season: mid-July – mid-August).

Campfire & outdoor cooking:
FLAMED SALMON

Meals cooked over an open fire have always been a part of Archipelago cuisine. Especially during Midsummer, people in the archipelago celebrate not only the cooking experience but also the time spent together in nature. In this cooking experience, we use flames, embers, and smoke to delight our palates. Eating by the campfire should be fun. We’ll start by lighting the fire. Later, we’ll prepare delicious flame-grilled salmon and create a delightful outdoor experience.

Sauna cuisine:
COOKING IN THE SAUNA

In Finland, people don’t just go to the sauna to sweat. People also cook there! Typical sauna dishes include stews prepared on the hot stones of the sauna stove. But trust us—there’s more to it than that! While you’re sweating it out in the sauna, we’ll work together to prepare a sauna snack for you. A unique culinary sauna dining experience you won’t soon forget!

Simplicity is often the best approach. And in Finnish cuisine, in particular, people love the pure, unadulterated flavors. Whether it’s fish or seafood, the ingredients are combined to highlight their unique qualities. Without any frills, we create the most popular island snacks of the Archipelago region. What would you like? Pickled Glasmeister herring or Skagen toast?

Wildfood:
FORAGING VARTSALA

A wild foraging adventure where you can pick, taste, smell, and eat everything nature has to offer on the island! In search of uniquely aromatic experiences, we head into the woods or down to the sea. Along the way, we’ll make fresh forest tea or combine and prepare the ingredients we find to create a small tasting menu.

Bavarian cuisine:
BREZN & KNÖDL

Anyone who has ever been to Bavaria will have come across at least one of these famous delicacies. They’re everywhere at Oktoberfest. We’ll show you how to make one of the two classics of Bavarian cuisine—pretzels or authentic Serviett-Knödel. And of course, you’ll get to taste your Bavarian treat at the end.

Christmas baking:
ALMOND STUFFED CAKE

Christmas in Germany—and that definitely includes Christmas stollen. The most famous stollen is undoubtedly the Dresden stollen. It’s made with sultanas, candied orange peel, almonds, marzipan, and lots and lots of powdered sugar. We’ll bake a stollen with you and spread some pre-Christmas cheer :-).
